The last week has brought a ton of snow and some very, very cold temperatures! On Tuesday, February 4, Kansas City got about 10 inches of snow. Needless to say, we didn't go to school that day! School was also canceled on February 5 and 6 due to the snow and some extremely cold temperatures and dangerous wind chills.
We took advantage of the still-decent temperatures on Tuesday and played in the snow. Sarah even got to make that snow angel she's been talking about for a month. (Don't tell her, but she really just laid down in the snow. She was convinced she was making snow angels, though!)
Of course, it was even more fun to play in the snow with friends!!! We are so lucky to have some great neighborhood families to play with. Eliza and Leslie came over to play in the snow, and then we all trooped inside for some of the chocolate chip cookie bars Sarah had helped me make earlier that morning!
I mean, snow tastes yummy, but nothing beats chocolate chips!
Here is the recipe that we used for the cookie bars. It was super easy and really yummy, and it didn't require any ingredients that I don't usually have on hand anyhow. This one just might become a snow day tradition:
Cookie Bars (AKA Pan Chewies)
1/2 cup butter
1 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/8 tsp. baking soda
3/4 cup chocolate chips (more if a 2 1/2 year old is helping you measure)
Melt butter in a microwave safe bowl. Let cool. Add brown sugar, vanilla and egg - mix well. Add dry ingredients gradually. Stir in chocolate chips. Blend well and pour into a greased 9x9 pan. Bake at 350 for 20 minutes. Try not to devour the entire pan as soon as it comes out of the oven.
Sarah DID eventually figure out the snow angel thing, too...
